I am always trying to eat gluten free pilaf made with brown rice or Quinoa. Sometimes i use Basmati rice too, since my husband likes white rice.
For many people, cooking brown rice is not easy. But after this recipe, i am sure it won’t be a problem any more.
All you need is to decide what flavors you would like to use, then mix them all together, set your timer for 40 minutes and TA DA! Ready to eat.
My recipe will be the one that i mentioned in my ‘Spiced (herbed) Chicken Quartet recipe in my blog.
- 1 cup Brown rice (wash few times)
- 2.5 cups water
- 2 tbs butter (or olive oil)
- 1 tsp Himalayan salt (other salt amounts need to be adjusted to taste)
- 1/3 cup diced carrot
- 1/3 cup frozen peas
Put everything in pan, put a lid on, on high heat. Once the water starts boiling, put it on very low heat and set your timer for 40 minutes. Check after 30 minutes and stir once.
THAT’S IT! ENJOY!
P.S: I like my pilaf soft. If you like crunchier, you may want to reduce the water amount and cooking time.
-You can saute 1 small onion (diced) and cook the same way (1 c rice+2.5 c water+salt, 40 min.)
-You can saute triple color, diced peppers (i like jalapeno too) and cook the same way.
-You can saute mushrooms and onion and cook the same way.
