I love cooking with herbs and spices. I made this spiced chicken and served with brown rice w/peas and carrots. My husband and i loved it. Hope you enjoy it too.
The herbs that i used are according to my palate, you can always add to them or omit any of them.
4 cloves of garlic, minced
1 tsp oregano
1 tsp Himalayan salt
1 tsp chili
1/4 tsp cumin
pinch of black pepper
pinch of red pepper flakes
pinch of cayenne
2 chicken quartet
1 cup chicken broth
Mix all the herbs in a little bowl.
Put 2 chicken quartets in a non-stick pan and brown on high heat each sides. Take the chicken in a baking dish.
There will be a little chicken fat in the pan; add that to the herb mix. Add some water if needed to make the herbs in a paste consistency.
Pour chicken broth in to the baking dish along with your chickens.
Spread the herb mixture over the chickens.
Bake in preheated oven 425F, baste few times.
When serving, make sure you pour the remaining herbed-chicken broth over the chicken.
