You may wonder, why I call this chocolate pudding “Morning’, because it is meant to be a healthy breakfast replacement that tastes like chocolate pudding but, actually, can be considered as a smoothie with nutritious seeds (chia, hemp, flax), oil (coconut) and nuts (cashew). I love spices a lot and the fruit ‘orange’ a lot lately. So you will see hints of them but of course you can omit them and may be, enjoy it with fresh/frozen raspberries.
It’s sugar-free, vegan, paleo, gluten free :)
1/2 cup cashew meal
1 tbs chia seed
1 tbs hemp seed
1 tbs flax seed
2 tbs cacao
2 tbs coconut oil
1-2 tbs maple syrup
1/3 cup water
1/2 tsp orange zest
cacao nibs (garnish)
Blend all in high-speed blender until smooth.
I love chocolate desserts. If i am not making my chocolate lava cake which is really easy, i make this chocolate pudding which is very easy too. Just minutes and it’s ready.
1/3 cup Honey
3-4 tbs Org. NON-GMO corn starch (or flour, can be gluten free flour ex: brown rice flour)
2 tbs cacao
1 tbs butter (optional)
Simply mix all the ingredients (except butter) and cook by stirring till you see the bubbles on medium heat. Cook 1 more minute. Add butter at last and stir.
I divide them in 2 bowls (one for me and one for my hubby:) ), add some nuts (i love walnuts) and berries (i put frozen raspberries) and sprinkle coconut flakes on them. Put them in freezer (if you like it cold. Sometimes i like to eat them warm) for about 5 minutes and they are ready to eat. Sometimes i put few tea biscuits in them which makes it more fulfilling :)
